Ingredients (Makes 3 Rolls)
• 3 sheets Gim (Korean roasted seaweed sheets for kimbap)

• 1/2 tsp Salt (for seasoning rice)
The Colorful Fillings:
• 2 Eggs, beaten and cooked into a thin omelet (then sliced into strips)
• 1/2 Carrot, julienned and lightly sautéed
• 1 cup Fresh spinach, blanched and seasoned with sesame oil and salt
• 3 strips Danmuji (Korean yellow pickled radish)
• 1/2 Cucumber, sliced into long thin strips
• 100g (about 3.5 oz) Firm tofu or avocado strips (optional for extra protein/creaminess)
Instructions
1. Season the warm rice
Place the freshly steamed warm rice into a large bowl. Add 1 tablespoon of toasted sesame oil and 1/2 teaspoon of salt. Gently mix with a rice paddle using a cutting motion so you don't mash the grains. Cover with a damp towel to keep it warm and moist while prepping fillings.
2. Prepare the filling ingredients
Pour beaten eggs into a hot, lightly oiled pan and cook a flat omelet. Let it cool, then slice into long, thin strips. Sauté the julienned carrots with a pinch of salt for 1-2 minutes until tender. Blanch spinach in boiling water for 30 seconds, squeeze out excess water, and toss with a touch of sesame oil and salt. Slice Danmuji and cucumber into long strips matching the width of the seaweed sheet.
3. Spread the rice evenly
Place a sheet of Gim (seaweed) rough-side up on a bamboo rolling mat. Grab a handful of seasoned rice (about 3/4 cup) and spread it evenly over 3/4 of the seaweed, leaving about an inch of empty space at the top edge.
