With chewy noodles and a creamy, spicy-sweet sauce, this Korean-inspired fusion dish comes together in just 15 minutes.
Ingredients (Serves 2)

2 packs of fresh or frozen udon noodles

1 tbsp gochujang (Korean chili paste)

1 tbsp soy sauce

1 tsp sesame oil

1 tsp sugar

1 tsp rice vinegar

2 cloves garlic, minced

1/2 small onion, thinly sliced

1/2 cup sliced mushrooms

1/2 cup chopped green onions

1 tsp neutral cooking oil (vegetable or canola)
Optional add-ins: sliced chicken, tofu, or a soft-boiled egg for extra protein
Instructions
1. Cook the noodles
Boil the udon noodles according to package instructions. Drain and set aside.
2. Sauté the aromatics
In a large pan, heat the oil over medium heat. Add garlic, onions, and mushrooms. Cook for 2–3 minutes until fragrant and tender.
3. Make the sauce
In a bowl, whisk together gochujang, soy sauce, sesame oil, sugar, and rice vinegar.
4. Combine everything
Add the cooked noodles and sauce to the pan. Toss well to coat the noodles evenly. Cook for 1–2 more minutes until heated through.
5. Garnish and serve
Top with green onions and serve hot. Enjoy with a side of kimchi or a soft-boiled egg if desired.
