For the spicy peanut dressing:

1 tbsp soy sauce

1 tbsp rice vinegar

1 tsp honey

1 tsp sesame oil

1 tsp sriracha (adjust to taste)

1–2 tbsp warm water (to thin)
Optional add-ins: grilled chicken, baked tofu, edamame, crushed peanuts, chili flakes
Instructions
1. Make the crispy rice
Preheat oven to 400°F (200°C).In a bowl, toss cooked rice with olive oil, salt, and garlic powder. Spread evenly on a lined baking sheet.
Bake for 20–25 minutes, stirring halfway, until golden and crispy.
2. Prepare the dressing
In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, and sriracha.Add warm water gradually until smooth and pourable.
3. Assemble the salad
In a large bowl, combine cabbage, lettuce, cucumber, carrots, green onions, and cilantro.4. Toss and finish
