Ingredients
(Serves 1-2) (Measurements: tablespoons, paper cup)- Cooking oil: 1 tablespoon
- Doenjang (fermented soybean paste): 3 tablespoons
- Ssamjang (spicy dipping sauce): 2 tablespoons
- Gochujang (red pepper paste): 1/2 tablespoon
- Korean zucchini (aeobok): 1/4 piece
- Onion: 1/4 piece
- Tofu: 1/2 block
- Potato: 1/4 piece
- Enoki mushrooms: a little
- Green onion: 2 tablespoons (about 1 stalk)
- Anchovy broth powder: 1/2 tablespoon
Preparation
- Cut 1/4 of the Korean zucchini into bite-sized pieces.
- Cut 1/4 of the onion. Onion enhances the savory and sweet flavors in the stew.
- Slice about 1 stalk of green onion. Green onion enhances the umami of the stew and balances any greasiness.
Cooking Instructions
- Heat 1 tablespoon of cooking oil in a clay pot or pot. Stir the oil to coat all sides of the pot.
- Add 3 tablespoons of doenjang and 2 tablespoons of ssamjang (in a 3:2 ratio) and sauté over low heat. Stir constantly to prevent the seasoning from sticking to the pot.
- Add 1/2 tablespoon of gochujang and continue stirring to avoid sticking. It's important to keep the heat low to medium before adding water to prevent burning.
- Pour in about 2 cups of water and bring to a boil.
- Slowly stir the mixture to dissolve the seasoning thoroughly. Properly dissolving the seasoning is crucial for achieving the rich flavor of the stew.
- Once the water starts boiling, add the prepared zucchini, onion, and tofu in order.
- You can also add other vegetables like potato and enoki mushrooms for extra flavor. Feel free to add any leftover vegetables or mushrooms from your fridge.
- Finally, add about 2 tablespoons of sliced green onion.
- Add 1/2 tablespoon of anchovy broth powder to taste.
- Optionally, add some brisket or sliced pork belly for extra flavor.
