It has lower calories than other well-known fried chickens, as it is baked in the oven rather than deep-fried, and it boasts a protein-rich flavor.


It pairs perfectly with the marbling and gobling sauces, making it a beloved choice for everyone, young and old, often referred to as "non-boring chicken."


Today, I will introduce a recipe for making Gubne Cheongyang Pepper Crispy Chicken at home.


Unlike typical fried chicken, which is heavily breaded and deep-fried, this recipe is simpler and easier as it’s oven baked.



Ingredients

(for 2 servings)


Cooking Tools: Oven (or air fryer), parchment paper

Measurement: Tablespoon


  • Chicken thigh meat: 600g
  • Milk: 200ml
  • Cooking oil: a little
  • Minced garlic: 1 tablespoon
  • Minced Cheongyang pepper: 2
  • Red pepper powder: 1 tablespoon
  • Store-bought herb salt: 1 tablespoon
  • Frying flour: 3 tablespoons
  • Bread crumbs: 4 tablespoons
  • Curry powder: 1/2 tablespoon
  • MSG: 1/3 tablespoon

Sauce Ingredients

  • Mayonnaise: 4 tablespoons
  • Wasabi: 1 tablespoon
  • Sugar: 1/2 tablespoon
  • Vinegar or lemon juice: 1/2 tablespoon


Preparation

  1. Finely chop 2 Cheongyang peppers.


Cooking Process

  1. Pour enough milk to submerge 600g of chicken thigh meat and marinate for 30 minutes. You can also use chicken wings or drumsticks, but be aware that using bone-in chicken can make it harder to remove odors and increase cooking time. (Personally, I find boneless Cheongyang Pepper Crispy Chicken tastier!) Chicken dishes cooked in the oven are more prone to odor compared to fried or boiled chicken, so it’s important to carefully remove any odors.

  2. After 30 minutes, discard the milk, rinse the chicken thigh meat under cold running water, and pat dry with a kitchen towel. Place a kitchen towel on a cutting board, lay the chicken thigh meat without overlapping, and cover with another kitchen towel, pressing down to remove moisture more effectively.

  3. On the chicken thigh meat, add 1 tablespoon of minced garlic, 2 minced Cheongyang peppers, 1 tablespoon of red pepper powder, 1 tablespoon of herb salt, 3 tablespoons of frying flour, 4 tablespoons of bread crumbs, 1/2 tablespoon of curry powder, and 1/3 tablespoon of MSG, then mix well.

  4. Line the bottom of the oven with parchment paper (or Teflon sheet) and generously coat it with cooking oil. If oil is not applied, the chicken will stick to the parchment paper as it cooks, so be sure to use enough oil.

  5. Bake in a preheated oven at 190°C for about 15-20 minutes. If using bone-in chicken, it will take significantly longer to cook, so check every 15 minutes and flip the chicken to ensure even cooking. The same method applies if using an air fryer.

  6. While baking in the oven yields the closest and tastiest replication of Gubne Cheongyang Pepper Crispy Chicken, if you lack an oven or air fryer, you can fry it in a pan with enough oil to submerge halfway over medium-high heat. When frying at home, many people tend to fry at a low temperature to avoid burning the batter before the chicken cooks, but doing so can lead to the batter absorbing too much oil, resulting in a soggy texture. Therefore, it’s essential to fry quickly over medium to high heat. (If using boneless chicken, it only takes about 5 minutes to fully cook.)

Sauce Recipe

Gubnae Cheongyang Pepper Crispy Oven Baked Chicken is known for pairing well with a spicy mayonnaise-based dipping sauce (marbling sauce). Here’s how to make a similar sauce using common household ingredients

  1. 4 tablespoons of mayonnaise

  2. 1 tablespoon of wasabi (using fresh wasabi enhances the flavor)

  3. 1/2 tablespoon of sugar

  4. 1/2 tablespoon of vinegar or lemon juice

  5. Combine all the above ingredients and mix well!
